Jersey City food blogger and cookbook author Ali Maffucci was a wellness community hit in 2016 after she launched Inspiralized, a blog dedicated to showcasing how to take everyday fruits and vegetables and turning them into “noodles” with a spiralizer. But, the writer just had the highlight of her career: a digital billboard in Times Square.
“Couldn’t imagine a better way to start 20177️off professionally than with a digital billboard advertisement in New York’s Times Square,” she the pic. “Go @theinspiralizer, go!! Watch the video on Snapchat and IG stories – it’s unreal! #timessquare#nyc #newyork #inspiralizedintimessquare#inspiralized #dreambig.”
This big moment comes after racking up a following of 62,000 likes on Facebook and 155,000 followers on Instagram. Ali also recently shared how spiralizing helped her shed 30 pounds in a new blog post. “I follow a strict 80/20 rule, where I eat real, whole foods 80% of the time and let myself indulge 20% of the time,” she said.
She is also all about meal planning. “In my meal plans, I ate something spiralized for 100% of my dinners and about 75% of my lunches. For breakfast, it was usually a smoothie, granola, avocado toast, oatmeal, or something quick like banana and almond butter,” she said. “Spiralizing is great for weight loss for a few reasons, but most importantly, you don’t feel like you’re eating diet food while eating #inspiralized. Sometimes when I look at some of these diet plan meals, it’s like steamed chicken and broccoli every night. The key to being successful with a healthy lifestyle is making sure you’re not falling victim to boredom.”
After all of her success, Ali is hoping to help you have successful 2017 when it comes to your health. You can sign up for her newsletter and meal plans with tons of recipes like Spicy Sesame Ginger Chicken Stir Fry with Zucchini Noodles. Yum!
Of course, you’ll need a spiralizer, which can be purchased on her website or at William Sonoma, Amazon and select Whole Foods locations. And for a night out, Houlihan’s offers her entrees, so you don’t have to miss a healthy meal.
